Hákarl (Shark Meat) (Iceland)
Hákarl is Iceland's national dish
made from dried shark meat, namely Greenland shark and other sharks. The meat
is first fermented for up to three months, then hung and left to dry for
another four to five months.
The dish comes in two flavors:
the chewy, reddish glerhákarl and the soft, white skyrhákarl. It is often
considered food for the brave because its high ammonia content often makes
people tick.
Cured shark meat is typically cut
into cubes and served with an accompanying local drink known as brennivin.
