Cascaron (Philippines)


Round, sweet, and chewy, cascaron is a deep-fried Filipino dish often served in sugary syrups. Often called bitsu bitsu, this traditional dish is made with sweet glutinous rice flour, grated coconut, and coconut milk. The dough is formed into small round balls and deep fried until golden and crispy on the outside. Although they can be served plain, these sweet balls are often flavored with simple, sticky caramel sauce or traditional Philippine sweet sorbets. The incredible variety of textures and the light flavor of coconut make cascaron one of the most popular Filipino desserts. Although they are usually prepared at home as a quick dessert after dinner, they are also often sold as street food by the numerous vendors who traditionally serve them as skewers on bamboo sticks.
