Canard Aux Cerises (Duck-Cherry) (France)


Canard aux cerises is a traditional French dish made with duck and cherries as the main ingredients. Other ingredients include carrots, onions, duck fat (or lard), white wine, seasonings, bay leaves, parsley, aromatic herbs such as celery and thyme.

Duck is fried in oil on very low heat with carrots and onions. Wine, herbs and spices are added to the pot, then water is added until the duck is completely covered with water. The meat is cooked until tender and then the duck is removed, the fat and juices are drained, then returned to the pot with the cherries.

Before serving, the duck is cut, the sauce and cherries are poured over the meat.
