SMOKED SALMON BALLS


  • 4 slices of smoked salmon
  • Juice of half a lemon
  • 2 tablespoons of olive oil
  • 2 tablespoons of mayonnaise
  • 1 teaspoon mustard
  • 1 avocado
  • 1 cucumber
  • 1 sprig of spring onion
  • 2 sprigs of dill
  • 2 sprigs of parsley
  • A pinch of pepper and salt

Whisk together the lemon juice, olive oil, mayonnaise, mustard, black pepper and salt. Add smashed avocado, chopped cucumber, spring onion, chopped dill and parsley and mix. Cover the inside of a medium sized round bowl with cling film. Place 2 smoked salmon over the edges. Place half of the drained avocado mixture on it. Join the dangling parts of the smoked salmon in the middle. Wrap well with cling film. Prepare the remaining ingredients in the same way. Chill in the refrigerator until serving. Remove from cling film and invert onto plate. Garnish with chives and serve.
