Seafoods with Anise (Cape Verde Islands)
- 1,1 lb sea bass fillet
- 1,1 lb salmon fillet
- 0,66 lb medium shrimp
- Half cup of flour
- 1 onion
- 6 bell peppers and colored peppers
- 0,44 lb of mushrooms
- 2 cloves of garlic
- 1 tablespoon of anise, salt
- 3 tablespoons of corn oil
- 2 tablespoons of flour
- 33,81 oz fish broth
Blanch the shrimp in boiling
water for 5 minutes and extract. Chop the cleaned fillet fish into cubes.
Lightly flour and sauté in a hot pan. When they start to turn white, add the
shrimps and cook for 3 more minutes and transfer to a plate. In the same pan,
fry onions, bell peppers cut into large cubes and colored peppers. Add the
mushrooms and garlic and cook for 3 minutes. In a separate pot, fry 2
tablespoons of flour with 3 tablespoons of corn oil until golden brown.
Stirring, add fish broth and boil for 5 minutes. Add seafood and vegetables
waiting on the plate. Boil the mixture for another 3 minutes. Serve with the
addition of salt and anise.
