RICOTTA FILLED FOREST FRUIT CREPE (ITALY)
- 2 crepes
- 0,66 lb of ricotta cheese
- 10 raspberries
- 1/2 lemon
- 3 tablespoons of granulated sugar or honey
For the filling, put the ricotta
cheese in a bowl and whisk it with lemon juice, granulated sugar or honey for
2-3 minutes. Then add the fruits and continue mixing. Spread the ricotta
filling in the middle of the crepes and roll it up. Add the forest fruits of
your choice. Drizzle with jam or honey and serve.
