Phở Cuốn (Vietnam)


Phở cuốn is a Vietnamese dish that means rounded pho. To prepare it, uncut pho noodle leaves are used as a type of wrapping paper filled with stir-fried beef, garlic, ginger, pepper, onion, lettuce and herbs such as mint, perilla, and coriander.

Once put together, these rolls are served with a side dip, which is usually a mixture of fish sauce, sugar, garlic, pepper, and vinegar. Phở cuốn can be served as a snack or starter and is especially popular during the summer months. The dish is believed to have been invented when a street vendor from Hanoi ran out of broth for his pho, uncut noodles still remained in his kitchen, and phở cuốnn was born.
