Pad Kee Mao (Laos)


Pad kee mao (commonly known as drunken noodles) is a stir-fried noodle dish in Laos and northern Thailand, similar to phat si-io. Wide rice noodles are made with chicken thighs (or breast), garlic, paprika, kaffir lime leaves, galangal, baby corn, brown sugar, fish sauce, soy sauce, and basil.

Other versions of the dish use squid or different seafood as the main ingredient. There are many theories about the origin of the name, but the most widely accepted is that pad kee mao is a popular food for a late night meal.

Today, the dish is also found in Thai fusion dishes, some versions of which are made with instant noodles or even spaghetti.
