Halawet al-Jibn-SYRIA (Sweet Cheese)


Although it is believed that the origin of Halawet al-Jibn (sweet cheese) is the Syrian city of Hama, it is a classic dessert that is widely associated with the Levant and Arab countries. Dessert is made with a combination of semolina, water, rose water, sugar and cheese. Traditionally, Akkawi or Majdoola cheese is used, but in modern versions it is replaced with mozzarella.

All components are combined, baked until a soft and bendable dough is formed, and then rolled out in thin layers. Before the layers are rolled into rolls, they are filled with ashta (cream).

The rolls are then sliced into small bite-sized pieces and typically have syrup poured over them and served garnished with rose petal jam and ground pistachios.
