Conserva de Cenouras à Algarvia-PICKLE (Portugal)
The Conserva de cenouras à
algarvia is a traditional Algarve appetizer, snack or side dish consisting of
pickled carrots. Peeled and sliced carrots are briefly cooked in salted water
with bay leaves to soften before being placed in a jar, and covered with a
mixture of olive oil, vinegar, salt, ground pepper, garlic and parsley on
top.Red pepper, bell pepper powder or cumin seeds are usually added for extra
flavor. Sweet, garlic and tang, this carrot marinade forms the basis of
numerous restaurants and taverns in the region and is typically paired with
slices of fresh Portuguese bread, olives, fish pate and a glass of fine rose
wine next to it.
