Vegetarian Yakitori-Wraps (JAPAN)
- 3 tablespoons of oil
- 1 red pepper, de-seeded and finely chopped
- 1 green pepper, de-seeded and finely chopped
- 200 g mushrooms, thinly sliced
- 1 leek, finely chopped
- Mixed salad
marinade sauce:
- 2-4 tablespoons organic Soy Sauce
- 3 tablespoons of white wine
- 1 tablespoon of liquid honey
Wraps:
- 2 large eggs
- 125 g flour
- 250 ml of milk
- 3 tablespoons organic Soy Sauce
- Some oil for frying
Eggs are whisked with flour and
milk and a smooth and fluid pancake batter is obtained. The dough can be
flavored with organic Soy Sauce. Wraps are cooked like pancakes and
set aside.
A marinade is prepared by mixing organic
Soy Sauce, white wine and honey.
Heat 2 tablespoons of oil in a
wok or large skillet and stir-fry the red and green peppers for 2-3 minutes
over high heat. Add mushrooms and leeks and fry for another five minutes.
Remove the pan from the heat and add some marinade, mix well and cook for 2-3
minutes on low heat until the sauce boils slightly.
Wraps are served with some salad
and vegetable toppings and eaten hot.
