Vegetarian Yakitori-Wraps (JAPAN)

 



  • 3 tablespoons of oil
  • 1 red pepper, de-seeded and finely chopped
  • 1 green pepper, de-seeded and finely chopped
  • 200 g mushrooms, thinly sliced
  • 1 leek, finely chopped
  • Mixed salad

marinade sauce:

  • 2-4 tablespoons organic Soy Sauce
  • 3 tablespoons of white wine
  • 1 tablespoon of liquid honey

Wraps:

  • 2 large eggs
  • 125 g flour
  • 250 ml of milk
  • 3 tablespoons organic Soy Sauce
  • Some oil for frying

Eggs are whisked with flour and milk and a smooth and fluid pancake batter is obtained. The dough can be flavored with organic Soy Sauce. Wraps are cooked like pancakes and set aside.

A marinade is prepared by mixing organic Soy Sauce, white wine and honey.

Heat 2 tablespoons of oil in a wok or large skillet and stir-fry the red and green peppers for 2-3 minutes over high heat. Add mushrooms and leeks and fry for another five minutes. Remove the pan from the heat and add some marinade, mix well and cook for 2-3 minutes on low heat until the sauce boils slightly.

Wraps are served with some salad and vegetable toppings and eaten hot.
