GARLIC SOUP ( THE REPUCLIC OF GEORGIA)
- 20 + 10 cloves of garlic
- 1 onion
- Half a glass of cream
- 1 tablespoon of flour
- 1 tablespoon of butter
- 1 tablespoon of sunflower oil
- 3.5~4 cups water or chicken stock
- 2 tablespoons of olive oil
- Salt
- Black pepper
For Top:
- 1 tablespoon of sunflower oil
Half a teaspoon of red pepper
flakes
Place 20 unpeeled garlic cloves
on a baking tray. Add olive oil, salt and pepper and cover with aluminum foil.
Bake in a preheated oven at 170
degrees until the garlic turns brown. Heat the butter and sunflower oil in a
saucepan.
Add the chopped onion and saute.
Chop 10 peeled garlic cloves for food and add to the pot.
Add the flour and mix quickly.
Add water and continue mixing. Add the garlic, which you have removed from the
oven and peeled.
When it boils, smooth it with the
help of a hand blender and boil for 5 minutes. Add the cream, salt and pepper
close to taking it from the stove and mix it with a wooden spoon.
Take the soup off the stove 1
minute after it boils (so that the cream doesn't cut). Drizzle the chili pepper
oil that you have heated on the stove and serve hot.
