VEGAN MAYONNAISE



 

  • 1 potato
  • 1 carrot
  • lemon  juice
  • 3 tablespoons of oil
  • 1 tablespoon mustard

Peel, wash, cut and boil the potato. Peel, wash and cut the carrot. Squeeze the lemon. Mix all the ingredients together with oil and mustard until you get a homogeneous paste. Put this in an airtight container, then in the refrigerator. A variant of this is known as beet mayonnaise: you can use raw beets instead of potatoes. This would be delicious with rice.
