  • 135 lbs spanish sauce
  • 135 lbs brown stock
  • 1 pack garnish

On medium low heat, mix brown stock sauce, espagnole sauce and garnish. Bring to a boil, reduce heat and simmer until liquid is reduced by half, about 1.5 hours. filter more.
